SCONES
Ingredients:
- Plain flour for dusting
- 3 cups *self-raising flour
- 80g butter chilled and cubed
- 1 cup milk
- Jam, to serve
- Whipped cream, to serve
Method:
- Preheat oven to 200 degrees.
- In a large mixing bowl add *SR flour, and then using your fingertips rub butter into flour until combined and the texture is akin to breadcrumbs.
- Make a well in the centre and add milk, using a spatula mix until a loose dough is formed.
- Turn out onto a clean and lightly floured surface and knead dough to properly combine.
- Pat dough into a 2cm thick round and then using a 5cm cookie cutter or glass cut out rounds, reforming dough as needed.
- Place on a baking tray and lightly dust with flour. Bake for 20-25 minutes then transfer to a wire rack to cool.
- Serve with jam and whipped cream.
*Pro Tip: to convert any of our plain flour into self-raising, just add 1 ½ tsp of baking soda per cup of plain flour.
